Children of all ages love to eat happy meals on weekends, Saturdays which include the family’s all time fave spaghetti, macaroni, and the crispy fried chicken as a side dish. We consume it best with a pitcher of calamansi juice freshly picked from our backyard to quench the thirst.

So the simple dilemma of mothers out there on how to cook the ideal crispy fried chicken — the Chowking Oriental way, the Jollibee Filipino style, or even the Yellow cab American style. So here’s the secret recipe in my mother’s kitchen, her 10 tips on how to make fried chicken crispier, just like the crispy pata, for the family.

10 Tips on How to Make Crispy Fried Chicken

Ingredients

  1. 5 drops of lemon (or 1/2 slice calamansi)
  2. 1/4 chicken drumstick (4pcs)
  3. 1 clove garlic, chopped
  4. 1 cup all purpose flour
  5. 1 cup cassava starch
  6. 1/3 teaspoon salt
  7. pepper to taste
  8. 1 cucumber
  9. frying oil
  10. 1 egg

Procedure

  1. Marinate the chicken for about 5 to 8 minutes only with a garlic, lemon, salt and pepper to taste.
  2. Mix the cassava starch and the all-purpose flour together in a separate medium-sized bowl.
  3. First coating: Dip the chicken onto the lightly beaten egg.
  4. Second coating: Dip the chicken unto the mixture of cassava starch and all purpose flour.
  5. Deep fry the chicken for about 5 to 8 minutes.
  6. Remove from the frying pan using a strainer.
  7. Set aside in a plate.
  8. Let it cool for 3 minutes.
  9. Deep fry again for another 3 minutes or until the chicken turns into golden brown.
  10. Serve best with lechon sauce (e.g. Mang Tomas) and few slices of fresh cucumber.

Additional Tips

  1. You may have your own quick and easy homemade white sauce. Simply mix 3tablespoon of yogurt, sprinkle pepper and parsley (or celery), sliced 1 clove garlic, sliced 1 onion, sliced 1 red bell pepper, 1/4 lemon (or calamansi) and a few teeny weeny sliced tomatoes. Serve with side dish cucumber.
  2. Use only cassava starch and not corn starch. Corn starch makes your chicken tough and difficult to munch by your children. Cassava flour works best for frying foods.
  3. Go for freshly harvested garlic, as it is richer in nutrients.
  4. Avoid slicing garlic if you’re not gonna use it yet for your cooking for the day so as not to attract germs on it.
  5. Always say a grace before eating your meal on the table. PRAY always.
